Pumpkin+Chocolate+Chip+Cookies

Pumpkin Chocolate Chip Cookies are the perfect fall treat. These cookies were easy to make and they tasted great.

Ingredients:

2 cups all-purpose flour

2 tsp baking powder

3/4 tsp baking soda

1 1/2 tsp ground cinnamon

1/2 tsp ground ginger

1/2 tsp ground nutmeg

1/8 tsp ground cloves

1/2 tsp salt

1/2 cup granulated sugar

1/2 cup packed light-brown sugar

1/2 cup vegetable oil

1 large egg

1 tsp vanilla extract

1 cup canned pumpkin puree

1 1/2 cups semi-sweet chocolate chips

 

1. First you are going to preheat your oven to 350 degrees. Line your baking sheets with parchment paper and silicone baking mats.

2. In a mixing bowl whisk together flour, baking powder, baking soda, cinnamon, nutmeg, ginger, cloves, and salt, set aside. If you would like to make the recipe easier you can substitute cinnamon, nutmeg, ginger, and cloves for 2 ½ tsp of pumpkin spice. I personally substituted the spices for pumpkin spice.

3. In an electric stand mixer, with the paddle attachment, blend granulated sugar, brown sugar, and vegetable oil until combined. 

4. Mix in egg and vanilla then slowly blend in pumpkin purée. It is important that you get pumpkin purée and not pumpkin pie filling because pumpkin pie filling has different spices and is a lot sweeter. It is also recommended that you don’t use fresh pumpkin for better consistency.

5. With the mixer on low speed, slowly add in flour mixture and mix until nearly combined. Make sure you stop to scrape the sides of the bowl to make sure everything is being mixed.

6. Once everything is mostly mixed add your chocolate chips and fold them into your batter with a spatula. It is important you don’t overmix your cookie dough because it will change the consistency.

7. Drop your dough onto your baking sheets either using a cookie dough scoop or a spoon. Make sure you are leaving space between your cookies to expand. The recommended space is about two inches.

8. Bake your cookies in the preheated oven for 11-13 minutes. I have a convection oven so I only had to leave them in my oven for nine minutes. No matter what oven you have, make sure you are watching your cookies while in the oven.

9. Allow cookies to cool for a few minutes before moving them to a cooling rack. After they are cooled to your liking, enjoy!
